Caribbean Shrimp Bowl

This Caribbean Shrimp Bowl is a tropical paradise in a dish, filled with vibrant colors and bold flavors that transport you straight to the islands. Succulent shrimp are seasoned with Caribbean spices, then paired with fluffy coconut rice, fresh mango salsa, and a creamy avocado lime dressing. Ingredients:

For the Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 tsp jerk seasoning
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp lime juice

For the Coconut Rice:

  • 1 cup jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1/2 tsp salt

For the Mango Salsa:

  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 jalapeño, seeded and diced
  • 2 tbsp cilantro, chopped
  • 1 tbsp lime juice
  • Salt to taste

For the Avocado Lime Dressing:

  • 1 avocado
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 garlic clove
  • Salt and pepper to taste
  • Water to thin, if needed

Toppings:

  • Sliced avocado
  • Lime wedges
  • Fresh cilantro

Instructions:

  1. Cook the Coconut Rice: Rinse the jasmine rice under cold water. In a medium pot, combine the rice, coconut milk, water, and salt. Bring to a boil, reduce heat to low, cover, and let it simmer for 15 minutes, or until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.
  2. Prepare the Shrimp: In a bowl, toss the shrimp with olive oil, jerk seasoning, paprika, garlic powder, salt, pepper, and lime juice. Heat a large skillet over medium-high heat. Cook the shrimp for 2-3 minutes per side, or until they are pink and opaque. Remove from heat.
  3. Make the Mango Salsa: In a small bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and set aside.
  4. Prepare the Avocado Lime Dressing: In a blender or food processor, combine the avocado, lime juice, olive oil, garlic, salt, and pepper. Blend until smooth, adding a bit of water if needed to reach a drizzling consistency.
  5. Assemble the Bowls: Divide the coconut rice between bowls. Top with the cooked shrimp, a generous spoonful of mango salsa, and sliced avocado. Drizzle with the avocado lime dressing, and garnish with fresh cilantro and lime wedges.
