Ingredients:

  • 1 1/2 cups rolled oats
  • 1 1/4 cups all-purpose flour
  • 3/4 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, melted
  • 1 cup raspberry jam
  • 1/4 cup chopped nuts (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan and line it with parchment paper, leaving an overhang on the sides for easy removal.
  2. Make the oat mixture: In a large mixing bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt. Stir in the melted butter until the mixture is well combined and crumbly.
  3. Create the base layer: Press two-thirds of the oat mixture firmly into the bottom of the prepared baking pan to form an even layer.
  4. Add the raspberry jam: Spread the raspberry jam evenly over the oat base. If you’re using nuts, sprinkle them over the jam.
  5. Add the topping: Sprinkle the remaining oat mixture over the raspberry jam, pressing down lightly to adhere.
  6. Bake: Place the pan in the preheated oven and bake for 30-35 minutes, or until the top is golden brown.
  7. Cool and serve: Allow the bars to cool completely in the pan before using the parchment paper to lift them out. Cut into squares and enjoy!

These bars can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
