Slow-Cooker Short Ribs

Slow-Cooker Short Ribs are a tender, flavorful dish that’s perfect for those days when you want a hearty meal with minimal effort. These short ribs are cooked low and slow in a rich, savory sauce, allowing the meat to become fall-off-the-bone tender while absorbing all the delicious flavors. Ingredients:

  • 4 lbs beef short ribs
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup red wine
  • 1 cup beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh thyme
  • 2 bay leaves
  • Optional: fresh parsley, chopped, for garnish

Instructions:

  1. Season the short ribs: Generously season the short ribs with salt and pepper on all sides.
  2. Sear the short ribs: In a large skillet, heat the olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 2-3 minutes per side. Transfer the short ribs to the slow cooker.
  3. Cook the vegetables: In the same skillet, add the chopped onion, garlic, carrots, and celery. Cook for 4-5 minutes, or until the vegetables begin to soften. Stir in the tomato paste and cook for another 1-2 minutes.
  4. Deglaze the skillet: Pour the red wine into the skillet, scraping up any browned bits from the bottom. Let the wine simmer for 2-3 minutes, then add the beef broth and Worcestershire sauce. Stir to combine.
  5. Slow cook: Pour the vegetable and liquid mixture over the short ribs in the slow cooker. Add the thyme sprigs and bay leaves. Cover and cook on low for 8-9 hours, or until the short ribs are tender and easily pull apart with a fork.
  6. Finish and serve: Remove the thyme sprigs and bay leaves from the slow cooker. If desired, skim off any excess fat from the surface of the sauce. Serve the short ribs with the sauce, garnished with chopped parsley if desired.
