  • 1/4 cup water

Instructions:

  1. Cook the Noodles: Cook the rice noodles or linguine according to package instructions. Drain and set aside.
  2. Prepare the Sauce: In a small bowl, whisk together the soy sauce, fish sauce, lime juice, brown sugar, peanut butter, Sriracha, and water until smooth. Set aside.
  3. Cook the Shrimp: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.
  4. Sauté the Vegetables: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic, red bell pepper, and carrot. Sauté for 3-4 minutes, until the vegetables are tender-crisp.
